The Vitovska by Zidarich is a unique wine, born from a rare and precious indigenous grape variety, cultivated only in a small area of the Carso near Trieste. It is a white wine made with skin maceration in open vats, expressing fruity aromas and wildflower notes, combined with elegant iodine and slightly briny hints, reminiscent of its Mediterranean and marine origins. Born from a spontaneous cross between Malvasia Bianca Lunga and Glera, the Vitovska has adapted very well to the windy climate and rocky soils of the Carso, becoming a true symbol of the territory.

The Vitovska wine comes from the vineyards that Benianino Zidarich passionately and tenaciously cultivates in the locality of Prepotto in the municipality of Duino Aurisina, inland to the north of the city of Trieste. A challenging territory, made of almost outcropping limestone rocks, covered by little red soil rich in iron minerals. The sunny and Mediterranean climate is refreshed by the Bora, which blows violently from the northeast. The Vitovska vineyards are located at an altitude of about 270 meters above sea level, with a southeast exposure and are cultivated in bush and Guyot with the extremely high density of 8000/10000 plants per hectare and a yield that does not exceed 50 quintals/ha. After manual harvesting, the grapes are destemmed and spontaneous fermentation begins with indigenous yeasts. Skin maceration occurs in open vats and is accompanied by daily punch downs, without any temperature control. The wine undergoes malolactic fermentation in large oak barrels and ages in barrels of various sizes for about two years, before being bottled without any stabilization or filtration process.

The white Vitovska perfectly expresses the concept of territorial wine, still made in an artisanal way. An indigenous grape variety present only in the Carso, a place with unique characteristics, a winemaker who works following the philosophy of maximum respect for the grape, with minimal intervention in the winery, are the prerequisites for achieving an absolutely genuine result. In the glass, it presents an intense, almost golden yellow. On the nose, it expresses aromas of wildflowers, aromatic herbs, ripe fruit, with marine hints,iodine and brininess. On the palate, it is rich, broad, and persistent, with balanced freshness and a savory finish.
