Bival's ‘Aldo 45’ is a fresh, creamy and balanced Prosecco Valdobbiadene Extra Dry. It undergoes a second fermentation in steel tanks according to the Martinotti-Charmat method after resting for at least 4 months on the fine lees. The Valdobbiadene Prosecco Extra Dry ‘Aldo 45’ from the Treviso-based Bival is a sparkling wine to be appreciated for its creamy and balanced style, characteristic of the best Valdobbiadene Extra Dry. The name ‘Aldo 45’ is a tribute to Aldo Biasiotto, the youngest of the three brothers who own the Bival winery, sons of the founder Costantino Biasiotto. Aldo is the expert winemaker, the one who, together with his brother Ettore, takes care of the vineyards with love and experience, values that are reflected in the qualities of this sparkling wine.

The Extra Dry ‘Aldo 45’ Bival Valdobbiadene Prosecco originates from pure Glera grapes grown on the hills of the Valdobbiadene area. The harvest is carried out entirely by hand between the second and third decade of September and is followed by the soft pressing of whole bunches, from which the must is obtained and conveyed into stainless steel tanks. Here, alcoholic fermentation takes place at controlled temperature, followed by a maturation phase of 4-5 months on the fine lees. At this point the sparkling base thus obtained is placed in an autoclave with the addition of cane sugar and selected yeasts for the second fermentation according to the Martinotti Method, a process lasting approximately 40 days.

The Valdobbiadene ‘Aldo 45’ Extra Dry Prosecco from the family-run Bival estate has a straw yellow color with greenish reflections, creamy foam, and fine, persistent perlage. The aromatic profile consists of fruity sensations of green apple and white peach, enriched by floral notes of wisteria and acacia flower. On the palate, it is fresh and creamy, balanced and light, with a pleasant finish that lingers on the gentle and sweet aromatic perceptions previously sensed on the nose.
