It is produced by one of the most important brands of Sicilian wine, which has also decided to dedicate itself to the production of high-end extra virgin olive oil, with a typically territorial profile. The Nocellara del Belice is an ancient native Sicilian cultivar, considered among the most prized of our peninsula. It is a fairly large and versatile olive, suitable for table consumption and for the production of high-quality extra virgin olive oil. It is a variety that matures quite late, with a good yield, historically present mainly in the western area of the island, in the territories of the provinces of Agrigento, Trapani, and Palermo. The oil is particularly appreciated for its delicate and fruity taste, characterized by very low acidity.
Menfi, in southwestern Sicily. The olive groves are cultivated in the Caparrina estate, which extends over an area of about 150 hectares, in an area of unspoiled nature. The plants are located on a gentle hillside that descends towards the white beaches of Porto Palo. The Mediterranean climate, tempered by sea breezes, has proven ideal for the olive tree. The harvest of the olives takes place strictly by hand, prior to full ripeness, in order to preserve the best varietal aromas of the Nocellara del Belice. The olives are washed with water and then sent for cold pressing. The pulp is separated from the pits to avoid bitter nuances. The olive paste is subjected to low-temperature kneading. The final step of the decanter separates the pomace from the oil, which is transferred to steel tanks for bottling.
Extra Virgin Olive Oil Nocellara Denocciolato is a highly prized oil, much appreciated for its refined finesse. It presents a bright green color with intense yellow reflections.
On the nose, it expresses aromas of aromatic herbs, basil, artichoke aromas, tomato leaf, fresh almond, and fragrant citrus nuances of bergamot and lime. On the palate, it is particularly soft and sweet, thanks to the processing without the pit, which enhances the elegant fruity notes of the pulp, enriched by a spicy finish. Due to its delicate characteristics, it is very suitable for salads, vegetables, fresh cheeses, steamed fish, soups, and generally with dishes of a light flavor.
