Grappa Sibona XO - 50cl

The Grappa XO by Sibona is a complex and alluring distillate made from pomace that stands out for its smoothness conferred by the long aging in wood. Roero, one of the most suitable areas for the cultivation of an excellent grape such as Nebbiolo: it is here that the Sibona distillery was born, immediately able to combine the tradition of local grape varieties, reworking it for the production of grappas of extreme quality. Not only Nebbiolo, therefore, but also Chardonnay, Barbera, Dolcetto, whose pomace is also reused in blends by the distillery, the first in chronological order to receive the license issued by the U.T.F, synonymous with great tradition and prestige. A family-run winery that has distinguished itself over the years for distillates that make drinkability their strong point.

The "XO" is produced from pomace of well-known local grape varieties, such as various types of Nebbiolo including those produced in Barolo and Barbaresco, and Barbera. The title XO is given to the best distillates, that is, those that have been aged in wood for at least six years reaching their optimal balance. The grappa from Sibona ages well over six years in small oak barrels in order to achieve the dual purpose of making the product much smoother and more sensual, and allowing it the adequate time to reach optimal harmony. A distillate that has received numerous accolades also thanks to the winery's policy of utmost respect for the timing and characteristics of the product.

The Grappa Sibona presents itself with an amber color that immediately invites olfaction. The nose is complex and extremely varied, enclosing suggestions of dried and candied fruit, tobacco, vanilla, and sweet notes reminiscent of honey and cocoa. The richness hinted at when smelling it is also evident on the palate, with a velvety and caressing texture, also due to its long aging in small barrels. The aromas previously detected are confirmed on the sip, which has, however, a length of a true champion and remarkable persistence. A distillate of great class, that knows how to make one feel at ease.
