The Grappa di Brunello is one of the most beautiful creations of Vittorio Capovilla that are inspired by the nobility of the finest Italian wines: in this case, the choice of the master of grappa concerned the historic Brunello di Montalcino, whose origins date back to the Middle Ages. Using marc of grapes that are from excellent and biological terroirs, Capovilla makes that spirit through a double passage in small copper stills in a water bath, a great artisan technique. Having reached its alcoholic peak, the grappa rests between two and three years in stainless steel tanks. The peculiarity of the Grappa di Brunello consists in having only lived the so-called off-esterification process, in other words, it has never been aged. After this stap, the dilution, which is made with Monte Grappa's pure spring water, it goes to determine the alcohol content. Capovilla's love for the gifts of nature shines clear in the Brunello's color wax lacquer bottle and is explained by aromas and flavors of berries.
